Pasta
with Pesto
1
lb. pasta
2/3 cup fresh BASIL
¼ cup walnuts
¼ cup olive oil
¼ cup parmesan cheese
1 garlic clove
1 cup julienned carrots
1 cup julienned zucchini
½ cup julienned red peppers
Cook pasta according to package. Place basil (leaves only), walnuts
and garlic in food processor and blend until finely chopped. With the
machine running, pour in the olive oil in a thin stream. Add the cheese,
salt and pepper to taste and process briefly to combine. Thin with 2
tbsp. hot water. Steam vegetables until tender. Toss pesto, vegetables
and pasta and serve.
